Well, a big congrats to Phoebe for acing her extensive exam which put her through her paces! She even listened obeying my request of "leave it" when tempted by treats fallen on the floor before her. I couldn't be prouder, and more pleased! Looking forward to sprinkling Phoebe good cheer at rehab centers and especially having children read to her at the elementary schools!
Thanks to Heather Garre of Tail Waggin Dogs Training who whipped us into shape via her pre-requisite class "Canine Good Citizen" by The American Kennel Club. We look forward to having some rewarding fun, giving back to a community we love!

Oooh la la, so many choices from hand knitted jewel tone winter sweaters, to reversible jackets, matching collars & leashes, stuffed toys, shampoos, edible cookies made in America and more paraphernalia to delight & laugh over.
We were immediately greeted with a caring welcome by Ashley, shown here with Phoebe! Ashely enthusiastically guided us through the boutique, and offered a selection of natural scented shampoos with a coconut base (no sulphates here) to sniff & pick for the self service bathing offered, which was the reason we were there! Choices of: Cucumber Pomegranate, Lavender, or Honey Suckle made the choosing challenging... Honey Suckle with a subtle fresh & clean sweetness won out in the end.

Hot Diggity boutique is all about service, yes service! Refreshingly so! My first time in - a newby at this, I was given complete & easy instruction from Ashely on how to use the sprayer wash & rinse, given my Honey Suckle shampoo, along with a brush to de-shed fluffy Phoebe a bit before bath, & a rubber apron which read: 'Dog Lover' of course! Set at your bathing station (there are a few stations) is a tub filled with neatly rolled white towels for drying, & a power jet - cool air- dryer for drying, you're informed that they are noisy, so there aren't any surprises! The water temp is even preset! How perfect is that? They offer 10 baths & the 11th one is free. Sweet... this is pooch haven with out a doubt!

Certainly something to nicker about!
Mouth watering treats of Nirvana to easily prepare & enjoy in a snap! I used 5 pieces of plump, sweet Cape Cod Bay Scallops, & 6 ounces of organic Salmon & incorporated the following into a magical mix: begin with preparing a brine & set the salmon within the brine about 30 minutes to firm up. In the meanwhile, take a portion of a yellow, orange or red sweet pepper, & finely dice. To taste, (a little goes a long way as the red onion is strong) take a bit of a red onion, & finely dice. To this add the juice from 2 lemons, 1 lime, & a quarter of a navel orange. Next dust this mix with red pepper flakes, fresh cracked black pepper. Now finely chop up the scallops & salmon, tossing the above, & incorporating all together in a bowl & cover with saran wrap over night in the refrigerator. To plate: wash & break up into small pieces red/purple kale & toss with your Ceviche preparation, combining all into individual portions, & garnish with a bit of fresh parsley! Enjoy your absolute SCRUMPTIOUSNESS! I promise you, you'll be glad you did! A bit of mouth watering Nirvana! Yummmm.
An Ayurvedic delight, especially given the seasonal change unfolding into fall, a perfect time to take charge of nourishing our system. Healing, warming spices of ginger, and curries create a calming meal. This dish is easy on the digestion, loaded with protein and entirely vegetarian. And in no time, easy to prepare and made with some noted, on hand ingredients.
Your ingredients, soak in a bowl of water over night 1-2 cups mung beans then be as creative as you choose to be with your vegetables, mix & change up: 1 -2 cups chopped vegetables. For this preparation I used a 1 yam, 3 carrots, a bunch of kale, 1 zucchini, 8 spears of asparagus. (feel free to use peas/pea pods, swiss chard, spinach, or winter veggies if your prefer.)
6 cups water, or less depending upon how dense or soupy you like this to be. Season with sea salt.
I prefer to cook the basamati rice separately in a rice cooker for perfect doneness of rice. Then add to mixture after it is finished, incorporating rice in ladle by ladle until thickened to your choice.
Add to a skillet 2 tablespoons or more if needed, of organic coconut oil, and 1 inch diced fresh ginger, and 2 tablespoons (or more ) red curry. Let this slowly cook until ingredients blossom and expand for approximately 5 minutes. Your nose will smell the curried scent and sense the time. Remove from heat. And incorporate into the vegetable mixture, stirring well, which follows:
Cook the yam, and carrots first with the mung beans, simmer about 20-30 minutes until mung beans are tender. Then toss the kale, asparagus and diced zucchini into pot, which will take only about 8 minutes further to cook.
Who doesn't like something easy to whip up on the fly, that's healthy, nutritious and easy on the budget?
Begin with inspirational, and simple ingredients: red lentils add amazing color to the dish, fresh kale, a small onion and a bit of garlic.
Approximately 1/2 cup red lentils, rinsed, covered with just enough water, and slowly simmered for 15 to 20 minutes. Undercook slightly, keeping a bit of crunch that will add a nuttiness and super texture to the dish.
Chop a small yellow onion, add your garlic and slowly cook in olive oil, covered about 20 minutes, until the onion is soft and translucent. Season with sea salt.
Get your pasta water boiling and add your kale for 3 minutes, taking care not to over cook. Scoop kale out, drain in colander and add to onion mixture incorporating the red lentils.
Cook your pasta, I use a veggie blend, and cook al dente. Drain well in colander and put in pasta bowl then toss with kale, red lentils and onion mixture. Now add fresh grated romano-picorina cheese, cracked black pepper and enjoy!
