A Spring Time Treat of a Savory Pie Extraordinaire! Create Your Own in No Time Flat.

Create a Savory Pie Scrumptiousness! And so easy to throw together for a delicious meal in no time flat! How does 30 minutes sound? I’ll guide you through the steps & share what puts the magic kick into this dish.

A little background on me: born into a family who’s father was a chef & restauranteur, combined with a creative – gourmet cook of a mother in her own right, I was somehow showered with culinary gifts of appreciation. for those who know me, know that I’m a ‘foodie’, an affectionate of food, & know that I feel there is nothing more meaningful in life than to sit down to a meal shared with family & friends. yes, the meaning of life.
anyway, onto a savory pie, that brings us there…

mushrooms

I begin with some organic & locally grown produce from ‘Not Enough Acres’ in East Dennis. Broccoli rob & cremini mushrooms. Rinse well & set aside to drain while chopping up 1 small yellow onion.

sauté the chopped up onion in olive oil to soften & add the cremini mushrooms, about 7 minutes until the onions are translucent. set aside & turn off burner.

the onions & cremini mushrooms will look like this. now add a bunch of fresh chopped parsley.

greens

blanche the broccoli rob for 2 minutes & remove from water & drain well. set aside.

cheese

grate a generous cup plus of aged white cheddar cheese, add a half cup or so of non fat feta cheese, & add 3/4 of a cup of non fat ricotta. to this add your herbs, additional parsley, dill & red pepper flakes (don’t be shy) this is going to give you that ‘kick’ & brings ‘zip’ to the savory pie.
in a separate bowl whisk 3 eggs & incorporate, gently folding into the cheese mixture. don’t over work.
now add your sautéed onion, cremini mushrooms & broccoli rob, again folding in gently.

this is what your savory mix will look like, thick & meaty in texture.

crust

partially bake a deep dish pie shell to ensure that the crust is cooked through. about 6 – 8 minutes in a 400 degree pre heated oven. then pour your savory pie mix into shell & bake for 45 minutes in a 400 degree oven or until when a knife is inserted – comes out clean. the aromatic fragrance will fill & capture your senses! another indicator that the pie is done & ready to enjoy!

quiche

your savory delight is perfect with a salad & a glass of sauvignon blanc that is tart & crisp.
depending upon the vegetables you choose, you may want to add a bit of zest from a lemon. but whatever you do, be brave, be bold, explore & play around with your ingredients! the secret is in the herbs, (parsley & dill) red pepper flakes & or lemon zest. bon appetite from the cape cod sandbar in harwich! ; )
